Step-by-step Guide
Triple of dishes with fish to be assembled
- Once the pieces are cut, we will assemble a dish with perfectly aligned layers to ensure even cooking.
- Take the mold and place a first layer of potatoes, previously boiled for about 5 minutes, covering the entire base of the mold.
- On top, place a uniform layer of apples sliced thinly, making sure they completely cover the potatoes.
- Add a second layer of potatoes on top, pressing lightly so that the layers are well compacted.
- On top, arrange some thin slices of soft cheese, distributing them to cover the entire surface of the potatoes.
- To finish, place a third layer of potatoes, pressing again to ensure the dish is compact.
- Carefully unmold, using a thin knife if necessary, to separate the edges.
- Repeat the process with the other dishes, ensuring that each one has the same number of layers.
- Finally, garnish each dish with sautéed vegetables cooked for about 5 minutes over low heat, and serve immediately.
Recommendations & Tricks
- Slice the potatoes into thin and even slices to ensure they cook evenly. A mandoline can be very useful for this task.
- Instead of fully cooking the apples, lightly sauté them to preserve some of their texture and add a touch of natural caramelization.
- Lightly steam the green beans and broccoli before adding them to the dish to ensure they remain tender and vibrant in color when cooked with the rest of the ingredients.
