Step-by-step Guide
Preparation
- Thirty minutes before baking, preheat the oven to 180 ºC to ensure it reaches the proper temperature.
- Melt the butter over very low heat or in the microwave in short intervals, and let it rest until it has a texture similar to ointment.
- Add the sugar and mix well until it is completely integrated.
- Incorporate the sifted flour and the baking powder, mixing to achieve a uniform mixture.
- Add the whole eggs, without beating them beforehand, and mix everything until obtaining a homogeneous and lump-free batter.
- Line the mold with parchment paper and grease it with butter to prevent sticking.
- Pour the batter into the mold, filling it evenly. Clean and peel the apples, then slice them into thin slices about 2-3 mm thick.
- Place the apple slices on top of the batter, slightly overlapping them to cover the entire surface.
- Bake the cake at 180 ºC for about 20 minutes. Check the doneness by inserting a toothpick into the center; it should come out with some crumbs attached for a slightly al dente texture.
- When you take the cake out of the oven, sprinkle it with powdered sugar. Then, carefully pour the small glass of liquor over it, distributing it well across the entire surface.
- Grill the cake under the broiler for 2 minutes, watching closely to ensure it does not burn.
Recommendations & Tricks
- Ensure to sift the all-purpose flour to avoid lumps and achieve a more fluffy cake.
- Beat the room-temperature butter with sugar using a whisk until you have a light and creamy mixture.
- Always use room-temperature eggs to ensure they mix properly with the other ingredients.
- Add two teaspoons of baking powder to the mixture to help the cake rise during baking.
- If you're using rum or Calvados, add it after beating the butter and sugar for a subtle touch of flavor.
- Preheat the oven to 180ºC at least 30 minutes before baking to ensure a consistent temperature, which is key for even baking.
- After the cake is baked, let it cool completely before adding powdered sugar to prevent it from melting.
