Step-by-step Guide
Pie Crust Style
- Clean the cherries and carefully remove the pits. Set them aside in a bowl.
- In a large bowl, mix the lard, white wine, olive oil, warm milk, and yeast. Stir well until you obtain a homogeneous mixture.
- Gradually add the sifted flour, stirring constantly with a spatula or manual whisk. Once the flour is absorbed, add a little more and continue stirring until all the flour is incorporated.
- Transfer the dough onto a floured marble surface and knead it by hand for about 5-7 minutes, until you get a consistent dough with a thick texture. In the last few minutes of kneading, fold in the cherries.
- About 30 minutes before baking, preheat the oven to 180°C (356°F).
- Lightly grease a high-sided baking tin with butter or oil and pour in the batter. Use a spatula to spread the batter evenly. Lift the tin and gently tap it against the counter to settle the batter properly.
- Sprinkle the sugar and flour mixture evenly over the top to cover the entire surface.
- Bake the batter at 180°C for about 30-40 minutes or until golden and cooked through. Check for doneness with a toothpick; it should come out clean when it’s done.
Recommendations & Tricks
- When preparing the dough with lard, ensure that it is well softened and at room temperature to guarantee that it distributes evenly, resulting in a smoother and more manageable dough.
- For a crispier and more aromatic result, use dry white wine, as it will add a slight acidity and enhance the flavors of the cherries.
- If there is leftover coca, store it at room temperature in an airtight container to prevent it from hardening, and consume it within a maximum of two days to maintain freshness.
