Preparation

  • If we prepare the mixture with whole spices, it will always have a more intense and deep aroma.
  • The spices from the first group can be heated whole for 5 minutes in a skillet without oil over medium heat, stirring continuously to enhance the aromas.
  • Once the spices are toasted, grind them into a fine powder with a grinder (a coffee grinder can be used) or with a mortar and pestle. Then, sift them and, once cooled, mix them with the spices from the second group.
  • Once all the spices are well mixed, they can be stored in an airtight jar, ready to be used when necessary.
Recommendations & Tricks
  • To obtain the maximum aroma, it is recommended to use whole spices whenever possible. Grind the spices yourself with a grinder or mortar, and then sift them to ensure that no large particles remain.
  • When grinding cloves, make sure not to overdo it to avoid turning it into an oily paste. One teaspoon is sufficient to provide the characteristic intense flavor.
  • Use freshly ground black pepper for added aroma. Two teaspoons of this pepper will add a rich complexity to the ras el hanout.
  • Before grinding green cardamom, slightly open the pods with a knife to release the fragrance of the seeds. One teaspoon is the right amount for a spicy yet moderate touch.
