Step-by-step Guide

Cold Soup

  • Rinse the cherries under cold running water and carefully remove the pits.
  • Place the cherries in a saucepan with 1 liter of water. Bring to a boil over medium-high heat and let it boil for 2 minutes.
  • Add salt and pepper to taste, stir well, and let the soup cool to room temperature before refrigerating.

Shrimp Tails

  • Bring the water to a boil in a large pot. When it starts boiling, add a pinch of salt.
  • Blanch the shrimp tails for 2 minutes in the boiling water, then quickly remove them with a slotted spoon and cool them in a bowl of cold water to stop the cooking process.
  • Cut the hard cheese into 16 very thin slices. Each slice should be slightly larger than the size of the shrimp tails.

Plating

  • Place 4 shrimp tails on each plate, and on top, arrange a slice of hard cheese.
  • Use a torch to melt the cheese until you notice it starting to caramelize, controlling the flame to avoid burning.
  • Drizzle the cheese with a dash of extra virgin olive oil, ensuring it is distributed evenly.
  • Serve the soup on the plates, taking care not to cover the shrimp tails, keeping them visible as the main garnish.
Recommendations & Tricks
  • When pitting the cherries, make sure to keep all the juice in a bowl to make use of it in the soup. This will add an intense and natural flavor to the dish.
  • To enhance the flavor of the shrimp tails, sauté them beforehand in a pan with a bit of extra virgin olive oil and a minced garlic clove before adding them to the soup.
  • Prepare the soup in advance and let it rest in the refrigerator for a few hours before serving. This way, all the flavors will integrate better, and the soup will be well-chilled for maximum enjoyment.
